Peanut Butter Oatmeal Cookies

Calling all peanut butter lovers - Clean and flourless peanut butter oatmeal cookies with chocolate chips! YUM!

Oh and they were DELICIOUS...I needed my peanut butter cookie fix and oh I got it!

just a side note: you definitely have to wait for them to cool down because they are very crumbly....they will smell amazing and it will be hard to do!

Ingredients:

2/3 cup old-fashioned rolled oats

1/2 tsp cinnamon

1 tsp baking soda

1 egg

1 cup peanut butter (easier if at room temperature)

6 tablespoons packed light brown sugar

1/2 cup semi-sweet or dark chocolate chips

Directions:

1. Preheat oven to 350 degrees F

2. Combine oats, cinnamon and baking soda together. In a seperate bwol beat the egg, mix in the peanut butter and the brown sugar. Combine dry and wet ingredients. Then add in the chocolate chips.

3. chill the cookie dough for 30 minutes

4. Line two large baking sheets with silicone mats or parchmet paper. Scoop the dough about 1.5 tbsp each onto baking sheet. Gently prsss down on dough with back of spoon to flatten slightly.

5. bake for 9 to 10 minutes, or 12 minutes if you make 7 cookies instead of 14. The coookies will look very soft and underbaked this is normal. For crispy cookies bake

for 12 minutes.
